Ingredients
- 2 cups Soy Yogurt (or other vegan yogurt)
- 1 Cucumber, finely grated and drained
- 1 tsp Lemon Zest
- 1 tbsp Lemon Juice
- 5 cloves Garlic, finely minced
- 1/4 cup Fresh Dill (use 2 tbsp if using dried dill)
- Salt and Pepper, to taste
Instructions
- Grate the cucumber using a food processor
- Once grated, wrap the cucumber in a paper towel for 15 minutes to absorb excess liquid
- While cucumber drains, zest the lemon and remove stems from the fresh dill
- Add the ingredients to a medium bowl and whisk together until well combined
