I love cookies and could probably eat vegan cookie dough by the tub.

But oatmeal raisin cookies have always been a favorite of mine.

These crumbly yet soft and chewy vegan oatmeal raisin cookies are the best recipe I’ve tried yet!

They remind me of the cookies I used to have as a kid with the chunky rolled oats and sweet cinnamon nutmeg flavor.

The vanilla icing is just the cherry on top (optional but definitely recommended).

Tips for the best vegan oatmeal Raisin cookies

Baking is hard, but getting the perfect cookies doesn’t need to be!

Stick to these tips to make sure your vegan oatmeal raisin cookies come out perfectly every time.

  • Soft & Chewy: Cornstarch is the secret ingredient to cookies that stay soft for days! The bake time is also important, if you over-bake the cookies they will dry out.
  • Crisp Around The Edges: Speaking of bake time, you want to bake the cookies until they are crisp and brown around the edges but still soft in the middle. This gives them a delicious crunch while also having that irresistible soft and chewy texture.
  • Scoop Evenly: Scooping even sized cookies means that they will all bake at the same rate. I use a cookie scoop to help out with this!
  • Flatten Out: Vegan cookies tend to not spread as much as cookies with eggs. Flattening the cookies to about 1/2 inch thickness before baking will help you get the perfect cookie thickness!
  • Let Cool: The dough for these cookies is extra thick and chunky because of the whole oats. That means even though they are soft and chewy, they are also crumbly. Let the cookies cool for 5-10 minutes on a cookie cooling rack to allow them to set before you dig in!

How To Make

Vegan Oatmeal Cookies

1. Mix Dry Ingredients

Preheat oven to 350 F and line a baking sheet with parchment paper.

In a bowl, thoroughly mix together all dry ingredients except the raisins.

2. Mix Wet Ingredients

In a separate bowl, mix together all wet ingredients until combined.

3. Fold Into Dough

Make a hole in the middle of the dry ingredients and add the wet ingredients.

Fold together until every thing has combined into a thick doughy consistency, but do not over mix.

4. Add Raisins (optional)

Fold in the raisins or any other mix-ins of your choice into the dough.

5. Scoop and Flatten

Using a cookie scoop, scoop even cookie dough balls onto the parchment lined baking sheet.

Flatten cookies to about 1/2 inch thickness (I used the bottom of a glass to do this). The cookies need to be flattened before baking because they do not spread as much as non-vegan cookies during baking.

Bake the cookies at 350F for 10-14 minutes until they are starting to brown around the edges but are still soft in the middle.

6. Drizzle With Icing

While cookies bake, stir together the icing ingredients. If the icing is too thick, add 1 tsp of coconut milk or milk of your choice as needed to thin the icing to your desired consistency.

Once done baking, remove cookies from oven and let cool on a cookie cooling rack for about 5 minutes.

Drizzle with icing and enjoy!

Raisin Substitutes For Oatmeal Cookies

Not everyone likes raisins, but can you still enjoy these oatmeal cookies without adding them?

Absolutely!

These cookies taste great plain without the raisins, but you can also get creative and try some of these delicious substitutes in your cookies:

Ingredients

Dry Ingredients:

  • 1 1/2 cups Rolled Oats
  • 3/4 cup Raisins (optional)
  • 3/4 cup Flour
  • 1/4 cup Coconut Sugar
  • 1/2 tsp Cinnamon
  • 1/4 Nutmeg
  • 1/2 tsp Salt
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Cornstarch (helps keep the cookies soft and chewy)

Wet Ingredients:

  • 3/4 cup Vegan Butter (softened)
  • 1/4 cup Maple Syrup
  • 1/4 cup Apple Sauce (unsweetened)
  • 1 tsp Vanilla Extract

Icing (optional):

  • 2 tbsp Coconut Cream (the thick creamy part on top of a can of full-fat coconut milk)
  • 1 tsp Coconut Sugar
  • 1/2 tsp Vanilla Extract

Instructions
