Black bean burgers are notoriously mushy…but they don’t have to be that way.
This recipe will teach you exactly how to make a tender black bean burger that’s so full of flavor it will leave you wondering why beef burgers even still exist!
The secret to a non-mushy black bean burger is to remove the moisture from the beans.
We do this by giving them a quick bake in the oven before mashing them into patties.
From there we add in some BBQ sauce, vegan Worcestershire, and hot sauce so there’s enough moisture to form patties.
Next we fold in some sautéed garlic and onion for even more flavor and some added texture.
Finally, we add some panko breadcrumbs to hold it all together. That’s it, the perfect vegan black bean burger!
Are Black Bean Burgers Good For You?
The flavor of black beans goes great in a Southwest style burger, but that’s not the only reason I use black beans as my burger base.
Black beans are a great source of plant-based protein. And of course, we can’t forget about all that fiber.
Just one of these southwest black bean burgers has:
- Fiber: 17.5g, 65% of the daily value
- Protein: 18.5g, 37% of the daily value
That’s pretty darn good compared to the 0 grams of fiber and 34 grams of protein in a typical beef burger.
Not to mention, these black been burgers have about half the fat of a beef burger!
The moral of the story is that beans should be an important part of any plant-based diet. Whether that’s in a burger or just as a side dish with some jackfruit carnitas tacos!
How To Make
Southwest Black Bean Burgers
Preheat oven to 350 F. Peel a large red onion, mince one half and slice the other. Slice tomatoes, green chiles, and avocado.
Thoroughly drain two 14 oz cans of black beans. Add beans to a foil lined baking sheet and season with about 1 tsp of paprika and cumin.
Once oven has preheated, cook the beans for about 10 minutes until slightly dried.
Fresh Tip: Heating the beans in the oven will help to dry them out so that the burgers aren’t mushy!
While the beans cook, heat a drizzle of oil in a pan over medium-high heat. Sauté the minced onion until soft, about 3-4 minutes.
Once soft, add the garlic and sauté for another minute.
Once beans have cooked, transfer them to a large bowl. Mash the beans with the back of a fork until they are mostly broken down.
It’s okay to have a few chunks of beans in there, it will give your burgers texture.
Add in the sautéed onion and garlic, BBQ sauce, Worcestershire sauce, hot sauce, and Panko breadcrumbs. Stir until well combined.
Substitutions: Try these easy replacements if you don’t have some of the ingredients lying around!
- 2 tbsp Ketchup for 2 tbsp BBQ Sauce
- 2 tbsp Soy Sauce for 2 tbsp Vegan Worcestershire Sauce
Form the black bean mixture into 4 equal sized patties, about 1 inch thick.
Heat a drizzle of oil in a large pan over medium-high heat. Once hot, add the black bean patties and cook until browned, about 3-5 minutes per side.
Once patties have cooked, remove from pan. Add buns to pan face down to toast. Cook about 2-3 minutes until lightly toasted.
Once buns have toasted, build your burgers with your toppings of choice! I spread the chipotle mayo onto the buns then add toppings from there.
The patties are flavorful enough to eat on their own, but it’s the toppings that really turn these into “Southwest” burgers.
For my toppings I went with:
- Homemade Vegan Chipotle Mayo
- Hatch Green Chiles
- Avocado Spread
- Shredded Lettuce
- Sliced Tomato
- Sliced Red Onion
Some vegan cheese, pico de gallo, and jalapeños would also be great choices.

- 2 tbsp Vegan Worcestershire Sauce (or substitute soy sauce)

- 1 tsp Cumin
- 1 tsp Paprika
- 4 Hamburger Buns
Southwest Toppings (Optional)
