Bliss balls are my go-to dessert.
They’re easy, don’t require any baking, and they’re full of healthy protein and fiber!
The only hard part is trying to decide which bliss ball flavor I want to make. No seriously…
I’ve made chocolaty cacao bliss balls, superfood peanut butter bliss balls, and even energizing matcha balls…
But these lemon coconut bliss balls might just be the best ones yet!
The flavor reminds me of a soft lemon cake, pretty similar to these vegan lemon raspberry cupcakes.
But the blueberry acai drizzle it what takes these lemon bliss balls to the next level. The flavors pair perfectly with each other!

How To Make
Lemon Bliss Balls
Optional: Soak cashews in warm water for 4 hours or overnight, until softened.
This step helps the food processor fully breakdown the cashews. If you have a high end processor you can skip this step.
Rinse and drain the cashews, zest and juice the lemon.
Add the drained cashews, oats, almond flour, almond extract, syrup, lemon zest, lemon juice, and half the shredded coconut (save other half to use as a topping) to a food processor.
Process until the ingredients are broken down and a “dough” starts to form.
Roll the dough into balls, you should get about 12 balls.
Roll the balls into the remaining shredded coconut or your topping of choice.
Set aside in the fridge to harden while you make the blueberry acai drizzle.
Add blueberries to a blender or food processor and pulse until they are finely pureed.
Strain the blueberry puree over a bowl, pressing with a spoon to get all of the juice.
You should get about 3 tbsp of blueberry juice.
Mix the blueberry juice, acai powder, and 1 tbsp of coconut milk cream (the thick creamy part on top of a can of full fat coconut milk) until well combined.
Use a spoon to drizzle the blueberry acai frosting over the lemon bliss balls.
For a thinner drizzle, cut the corner off a plastic bag. Add the drizzle to the bag and squeeze it over the bliss balls.
Are Lemon Bliss Balls Healthy?
As far as desserts go, these lemon bliss balls are relatively low in calories, sugar, and fat.
They also have a reasonable amount of fiber and protein per serving.
Plus the blueberries and acai berries in the “icing” are both known for their high antioxidant contents.
- Blueberries: Contain more antioxidants than cranberries, raspberries, and blackberries. Blueberries have an ORAC score of 9621. (The ORAC score is a measure of how much antioxidants are in foods)
- Acai Berries: Acai berries are known for being an antioxidant “superfood”. They have around 10x the amount of antioxidants of blueberries with an ORAC score of 102700!

Boost it with added Protein
Getting enough protein on a plant-based diet can be a struggle some days.

- 1/2 cup Oats
- 1 cup Shredded Coconut (save half to use as a topping)
- 1/4 cup Almond Flour
- 2 tbsp Maple Syrup
- 1/2 tsp Almond Extract (or Vanilla Extract)
- 2 tbsp Lemon Juice (juice from about 1 lemon)
- 1 tbsp Lemon Zest (zest from about 1 lemon)
Blueberry Acai Drizzle (Optional)
- 1/2 cup Blueberries
- 1/2 tsp Acai Powder
- 1 tbsp Coconut Milk Cream (the thick creamy part on top of a can of full fat coconut milk)
