I use it as a vegan (and healthier) substitute for sour cream on all of my tacos and burritos.

Is Cashew Crema Healthy?
Cashews are definitely a vegans best friend.
They can be used to make a variety of cream based sauces like cashew mayo or creamy vegan ranch dressing. They can even be used for vegan cheeses!
But you don’t have to be a vegan to enjoy cashew based creams – they’re a much healthier alternative to the fat heavy dairy creams.

Cashews are much higher in good fats like monounsaturated and polyunsaturated fats and lower in bad fats like saturated fats compared to sour cream and dairy products. [1]

Take that dairy! And the best part is, this cashew avocado crema is super easy to make at home!
How To Make
Avocado Cashew Crema
Soak the raw cashews in a bowl of warm water for 30 minutes. This will help to soften the nuts and create a creamier texture. If you don’t have a powerful blender like a Vitamix (I use this one) then you may need to soak the cashews for 2-3 hours.
While cashews soak, halve and peel the avocados and remove the pits. Halve the lime if you are using fresh squeezed lime juice.
Rinse and drain the soaked cashews. Add the cashews, avocados, lime juice, apple cider vinegar, and water to a blender. Add a pinch of salt and pepper.
Blend on high until well combined and you have a thick and creamy consistency. If you want to drizzle the crema then continue blending and add 1 tbsp of water at a time until you reach your desired thickness.
Cashew crema generally lasts in the fridge for up to a week but due to the avocados this one can start to brown after a few days.
For the best results store in an air tight jar and refrigerate immediately!

Ingredients
- 2 Avocados, peeled and pitted
- 1 cup Cashews
- 2 tbsp Lime Juice (juice from about 1 ripe lime)
- 1 tbsp Apple Cider Vinegar
- pinch of Salt and Pepper, or to taste
- 3/4 cup Water
Instructions
- Soak the cashews in warm water for 30 minutes.
- While cashews soak, halve, peel and remove pit from the avocados. Halve limes if using fresh limes for the lime juice.
- Drain and rinse the soaked cashews. Add all ingredients to a high powered blender and blend until creamy.
